Synopsis:
This presentation will look at sustainability in beverage production with particular focus on Scottish distilleries. You will be introduced to the concepts and boundaries used in assessing sustainability and advances which have been from processes to by-products. The wider environmental impacts beyond net zero will also be discussed along with some of our more recent research with whisky and rum distilleries.
